More than 40 years ago, Mariano Torres and his wife, Caridad Cabañero, brought to life one of Ibiza’s most emblematic restaurants: Es Xarcu. Its well-deserved reputation is built on the uncompromising quality of its ingredients and a distinctive culinary method – simple, yet authentic. Today, their daughter, Carolina Torres, has taken the helm of the family business, reviving the essence of its origins: a traditional beachside chiringuito concept, where respect for the surroundings and for the cuisine itself remain at the forefront.
At Es Xarcu, diners can savour the island’s authentic fresh fish (rotja, denton, grouper, John Dory…) baked in the oven using a time-honoured technique with a personal touch that makes each dish unique.
Renowned also for its fresh red prawns and hand-carved Iberian ham, the restaurant’s Mediterranean seafood and starters are another hallmark of its identity.
An extensive selection of wines and champagnes, served at the perfect temperature, accompanies its specialities against the backdrop of the island’s last untouched cove.
